Gilbert started a career in food right out of high school by completing the Chef Training program with Red River Community College. From there, he started working in bakeries and restaurants throughout Winnipeg, Canada. While working, he also completed programs in Human Resources, Payroll and Adult Learning. He also holds the designation of Certified Training and Development Professional with the Institute for Performance and Learning.

With a move to Toronto, he rediscovered his passion for food and wine. He completed courses in wine while finding his love for sake.

Gilbert holds the Introductory Sake Professional and Certified Sake Sommelier certificate with the Sake Sommelier Association. He also has certification with WSET Level 1 in Sake, Sake Educational Council’s Certified Sake Professional, and Michael Tremblay’s Sake Scholar.
